Hearty Chicken Soup
3 lb. chicken, cut in pieces
3 quarts water
1 Tbs. salt
6 peppercorns
1 cup onions, chopped
1 cup celery, chopped
1 cup carrots, chopped
1/2 cup green pepper, chopped
1 Tbs. Worcestershire sauce
1 cup raw rice (optional)
Parsley flakes
Place chicken in a soup kettle with water, salt, and peppercorns. Cook over low heat 2-2 1/2 hrs. until chicken is tender and separating from bones. Skim off fat and remove bones. Cut chicken into pieces and return to kettle. Add remaining ingredients and cook 30 more minutes until vegetables are tender but not mushy. Garnish bowls with parsley flakes.
