Preserves, properly speaking, are fruits preserved whole in heavy syrup, but the term is often used for jams and jellies. Making jams and preserves was an activity settlers would have participated in as a family, collecting the fruit from the bushes and trees and helping with the cooking process. Preserves greatly expanded the fare away from the farm. Cowboys on the the American West coined the precious foodstuffs "airtights."
